FISH PROCESSOR/FILLETER

Reports To: Production Manager, Director of Operations

Tre-Fin Foods is currently seeking  a skilled and detail-oriented Fish Filleter/Processor to join our team. The ideal candidate will be responsible for processing and preparing fresh seafood in our certified facility by cutting, filleting, and portioning fish according to specifications for our various customers and sales outlets. This role requires precision, efficiency, and an understanding of seafood quality and safety standards.

JOB SUMMARY

As a Fish filleter/processor, you will be responsible for the efficient and accurate preparation of fish, including cleaning, gutting, filleting, trimming and vacuum packing fish for sale while maintaining high standards of quality and hygiene. 

Key Responsibilities

  • Filleting and Preparation:

    • Accurately and efficiently fillet various types of fish (salmon, sablefish, lingcod, rockfish, halibut, petrale sole, albacore tuna) according to established procedures.

    • Trim fish to remove bones, skin, and excess fat.

    • Prepare fish for packaging or further processing.

    • Vacuum pack filleted fish in whole fillets or portioned fillets.

    • Pack frozen fish into boxes

    • Other duties as assigned.

  • Quality Control:

    • Inspect fish for quality and identify any defects or issues.

    • Ensure fish is handled and stored properly to maintain freshness and quality.

    • Adhere to company policies and procedures regarding food safety and sanitation.

  • Production and Efficiency:

    • Meet production targets and deadlines while maintaining high standards of quality.

    • Collaborate with other team members to ensure timely and efficient production.

    • Operate and maintain processing equipment and machinery.

  • Hygiene and Safety:

    • Maintain a clean and sanitary work area according to established procedures.

    • Dispose of fish waste properly and follow all safety and hygiene regulations.

    • Follow all safety protocols and procedures.
